So I have been on a cooking/baking RAMPAGE lately and I thought it would be an awesome idea- (Uh oh, she has an idea. Everyone take cover!) Oh, hush... I thought it would be an awesome idea to write an MB Cookbook where everyone comes and posts recipes that they love so we chefs can have something to do! :D

 

First, I made pizzas last night, but I opened a can of CRUSHED pineapples instead of sliced... So I decided this morning that I wanted a pineapple smoothie. I found a recipe and fixed it up to suit my needs and it. Was. Amazing. I'm not even kidding. It was so good.

 

Pineapple Banana Smoothie

 

-Two large spoonfuls of canned crushed pineapple

-One large, sliced banana

-Five ice cubes

-One cup of pineapple juice (I just used the stuff from the can)

 

*Put it all in the blender and blend it until it has reached your desired consistency. I have a Blendtec and I just hit "Pulse" a few times and it was perfect. :)

*If the mixture thickens (which may happen if you use a frozen banana), add more juice or water. If the mixture is too runny, add more ice.

Alright, I'll share a secret recipe me and a friend came up with.

 

(it's in white.)

 

4 oz. Unflavored coffee.

1/4 cup of milk.

3 scoops of candy cane ice cream

5 ice cubes

1 tablespoon of SECRET INGREDIENT. (chocolate milk.)

 

1. Brew coffee, add milk and ice into a mason jar or other large glass container, and put in freezer until chilled, but not frozen.

2. Add ice cream and put in freezer until frothy.

3. Add SECRET INGREDIENT if needed. Enjoy!

 

(Makes a small batch.)

APPLE HASH

 

-Three cups of frozen chopped potatoes

-Two cups of frozen onions and peppers(of choice.)

-Olive oil

-One large apple

-Salt and pepper to taste

-One fried egg(topping)-optional

-Hot sauce(topping)-optional

 

*Preheat oven to 350 degrees

*Put onions/peppers and potatoes in a large pan(safe for the oven.)

*Core the apple, then cut it into sixths. Cut the sixths vertically into bite-size pieces. Add the apples.

*Add one swish of olive oil.

*Leave in the oven for 13 minutes.

*Add salt and pepper to taste.

*EAT

Tomato Soup

 

-4 tablespoons unsalted butter
-1/2 large onion, cut into large wedges
-1 (28-ounce) can tomatoes, we prefer to use whole peeled or crushed
-1-1/2 cups water
-1 teaspoon coarse kosher salt, or more to taste

 

*Melt butter over medium heat in a large saucepan.

*Add onion wedges, water, can of tomatoes with their juices and the salt.

*Bring to a simmer and cook, uncovered, for about 40 minutes. Stir occasionally and add additional salt as needed.
*Blend the soup -- it doesn't need to be ultra-smooth, some texture is a nice touch. An immersion blender makes quick work of this or use a blender.
    **If you use a small blender, it is best to blend in batches and not fill the blender as much as you usually would since the soup is so hot. Like I said, I have a Blendtec and it works perfectly with the entire batch.

*Remove the center insert of the lid and cover it with a kitchen towel while blending — this helps some of the steam release and prevents the lid from popping off (which can be a big, hot mess)

 

What is with me and blenders? Anyway, this is a really good recipe and it's quite easy! I'm actually considering making bread and this tomato soup and have grilled cheese tonight! :)

Amish Sweet Bread

 

First, I must say, this is the number one BEST bread recipe in the entire universe. No lie. It is SO good.

 

-2 Cups of water

-2/3 Cup of sugar

-1 1/2 Tablespoons of yeast

-1 1/2 Teaspoons of salt

-1/4 Cup of cooking oil (I use canola)

-6 Cups of flour

 

*Combine water, sugar, and yeast and let it proof for 10 minutes.

*When yeast mixture is a creamy foam with little bubbles, mix in oil and salt into the yeast mixture.
*Slowly mix in one cup of flour at a time. Use as much flour as needed to create a good, non-sticky dough.
*Knead dough for about 5 minutes.
*Place the dough in bowl and cover with a slightly damp cloth or plastic wrap to let rise. Let rise for about 1 hour or until doubled. (In the summer, I put it in the garage and let it rise for 30 minutes)
*After it has risen, punch dough down. Divide in half and shape loaves.To shape loaves, I separate into two balls and roll them out with a rolling pin. Then I roll them into rolls (XD) with my hands.
*Place loaves into 2 well-oiled 9x5" loaf pans. Allow to rise for about 30 minutes. (In the summer, I let it rise for 30 minutes in the garage)
*Bake at 350°F for 30 minutes or until cooked through. Place on a wire rack to allow to cool.

 

You can use a mixer, but I prefer to use my hands. The mixer makes it more dense and I don't like it. :P If you do it by hand, it's fluffier. AND when adding the flour, MAKE SURE you have a post-it note or something to keep track of how many cups you have put in. Trust me, you will be thankful for it. :)

 

So, what do you guys like to listen to while you bake? I listen to Owl City and Louis Armstrong (or just '40's swing).

Easy Boiled Eggs

 

*Eggs

*Water

 

*Boil water in a pot on the stove.

*Once the water is boiling, put the eggs in the water. Once the water is boiling again, set the timer to thirteen minutes.

*Once the time is up, put the pot in the sink and run cold water over the eggs.

 

The eggs will peel beautifully!

I have some recipes, but can't really write them out right now so, 

Simple Tip for scrambled eggs! Half and half makes eggs fluffier, but if you don't like your eggs fluffy just add milk
